Beginner’s Choice: A Tribute to Mothers

Sans rival means without rival or unrivalled in French. I had the famous Filipino sans rival cake for the first time in the Philippines. It left an impression! It was the richest cake I had ever had.  It was a layered cake with cashew meringue and French buttercream. It was crunchy and chewy, simply delicious.

I thought such a cake could only be baked by a chef. I have only had it once in Singapore and it was a cake that was bought.

Bianca surprised me with her sans rival cake. She is a talented teenager, but I didn’t know how talented!

I happened to mention to Angelica (Bianca’s mother) that I was impressed by Bianca’s sans rival cake. She had the following to say: “Oh yes. We are in a call before she tried to bake it. I had to give her my recipe step-by-step and all the techniques for the right consistencies of meringue and French icing. She did it well. I think she is a better baker than me.”

Since today is Mother’s Day, it’s a good day to acknowledge the contribution of mothers. Behind every good cook and baker there is an inspiring and encouraging person. That person is often a mother, like in Bianca’s case.
