Mum’s Brunch Special
With the waning of the Covid-19 pandemic and the waxing of the “back-to-normal”, our Sunday lunches have reverted back to pre-pandemic times, which means quick prep lunches after Sunday Mass.
True to form, last Sunday, I decided to ruffle up a Big Breakfast, yes, for lunch.
It had all the staples, plus trimmings. From scrambled eggs, to sunny sides, plates piled high with rashers of bacon and steaming bowls of baked beans. Hot buttered toast accompanied with jars of jam, marmalade and peanut butter rounded the meal off.
After the feasting was done, I discovered some leftover rashers of bacon. Not wanting to waste them, I searched the Net for a simple bacon and cheese muffin recipe. I thought they would make a great tea time treat.
While the recipe I picked used grated cheddar cheese, I substituted it for cream cheese since that was what I had on hand. I had my fingers crossed that it would turn out alright.
They loved it!


Breakfast that became lunch and tea
Some snacked on them plain, while others slathered their muffins with liberal lashings of butter and jam.
I was as pleased as Punch since nothing from lunch was wasted.
Muffins are easy to make and delicious to enjoy. With so many recipes to glean from the net, there is a little something for everyone, whether sweet or savoury, as a snack, for tea, or even for celebrations.

Andrea was away travelling for a month. She attended her son’s graduation. There are always reasons to celebrate, some more important than others. Just being at home on Sunday is reason enough. Mum’s Muffins are unique because they are only made by mum. Every mum has her signature dish or cake.
After Queen Elizabeth’s jubilee celebrations, the simple marmalade sandwich has a special place in the history of grand celebrations.
