Beginner’s Choice: More of Val’s Amazing Lunchboxes

Nurses not only have to be on their feet the whole day attending to patients, they often have to be awake at night on night shift. Despite her tiredness Val always has a smile for me whenever we meet, and she still finds time to send me photos of her lunchbox meals. Pearl, who is a nursing student, is a fan of Val’s lunchboxes. She will be pleased with this week’s post.

Val sent a photo of her mini hamburg steaks with red wine sauce (featured image), with the following description:

① (slightly burnt) mini hamburg steaks with red wine sauce
② (leftover) spinach in sesame dressing
③ (also leftover) burdock root and carrot stir fry
④ cabbage sautéed with garlic and sausage
⑤ the remainder of the sausage, cut into an octopus shape 
⑥ (leftover) Indonesian fish pepes, steamed by my mother
⑦ eggs!

My cooking isn’t always perfect, and there’s a lot of recycling of leftovers. But adding one or two freshly cooked side dishes, and rotating the main dish make things much less boring!” Val

Val sent the following on Mother’s Day:

Nothing new from yesterday, except for the beef yakiniku and quail eggs!” Val

Val’s Friday lunchboxes are always interesting. Friday might be “fish day” for many people, but it doesn’t mean that lunch has to be boring.

When one is focused on having healthy and hearty meals like Val is, it’s easier to be creative. Somehow busy people get more things done. They know how to make the best use of time and to make it multiply.
