It has been a busy week, and the HomSkil’s Homemaking 101 course is on my schedule for this afternoon. I managed to get some free time to go on a National Gallery tour yesterday, and I will recommend it. Lianne, who was our guide did an excellent job. Two hours flew by too quickly. She was right that one could spend days in the galleries if one could hear all the stories behind each exhibit.
I was in a bit of a panic for this week’s blog post. But then Bianca came by, so I reminded her that I was still waiting for an article from her. She is a seventeen year old who cooks well, bakes well, paints well… and is very dependable. She didn’t let me down. She sent photos of a cake her mother baked with a short write-up, but it was a great compliment to mothers.

Feast days or special days are the best because not only do I spend time with the family, my mom also bakes her fantastic cakes.

Today we celebrated some good news and my mom baked a Mango Chiffon cake with caramel icing in the middle. I’d say this is one of my many favourites that she has baked.
I don’t know about you, but I always wonder how mothers can just cook or bake something up in such a short time and be able to present it by dinner time even when their day is packed.
Since I am in a family of 7, on special occasions when our Mom bakes a cake that we all love, we can finish it in a day!
Maybe we just really love cakes – our Mom’s fantastic delicious cakes!
