Beginner’s Choice: Peachy egg soup

What do you do when you when you have no vegetables to cook at home? Start by looking at what you have in the kitchen. That was what happened to me this week. Fortunately, there were some essentials like eggs, butter, onions, potatoes, and tomatoes. I thought that I could make a soup with them.

I used to make soup with fuji apples, but I found a bruised peach in the fridge. Fruits are not pleasant served when they are bruised, but they are still edible. They can still be served as cut fruits or cooked. I thought I would try putting the peach into a soup.

I made a soup with what I found, and to my surprise Danielle, my lunch companion, liked it so much that she asked for the recipe.

It’s a simple recipe, so I was happy to share it with her on WhatsApp:

  1. Two tomatoes
  2. One potato
  3. One small individual pack of butter
  4. One onion
  5. One peach
  6. One egg
  7. Black pepper
  8. Three tablespoons fish sauce (salt or soya sauce can be used instead)

Method

  1. Sauté the chopped onions, potato, tomatoes in the butter
  2. Add water, bring to a boil, then lower the heat
  3. Add the peach slices
  4. Add black pepper
  5. Keep the pot simmering for 15 to 20 minutes
  6. Beat an egg, add to the soup
  7. Add the fish sauce (adjust according to taste)
  8. Turn off the fire when the egg is cooked

The soup went nicely with pork stew, which was cooked the day before, and freshly cooked rice.

Danielle asked if fish sauce is essential for this soup. I told her that it’s not. In fact, I would leave out fish sauce and egg if I make this soup for my vegetarian friends. I personally like the anchovy flavour that fish sauce gives.

I thought I would post the simple recipe. It’s good for students studying abroad who need a simple soup on a cold day. It goes well with bread too.
