I met Elizabeth when she joined HomSkil’s Homemaking 101 online course two years ago. She was looking forward to moving to her new place, where she would be able to cook. We kept in touch. I was happy to hear from her recently. She sent photos of her home-baked cakes and bread and her cooking. I was impressed by the variety of cuisines.
Elizabeth’s cooking
The first dish was a Spanish dish which came with a note: “I don’t know what this is called. But during a car ride back to Singapore, a friend was sharing about a simple Spanish dish – just using ground pork, onions, garlic, tomatoes and whatever seasoning you like. I used thyme, oregano, parsley and salt for the seasoning. It was low cost, and my husband said it tasted good!” Elizabeth

Her other dishes were not simple. San bei chicken is a popular Chinese dish. “San bei” means three cups. The main ingredients are rice wine, soya sauce and sesame oil. According to Elizabeth, tumeric chicken is a very easy-to-make tasty dish. Sambal mussels are spicy. Elizabeth said she was a bit too heavy-handed with the sambal and it was a bit too spicy for her.

Elizabeth’s baking
Elizabeth tried her hand at baking and hopes to bake birthday cakes for celebrations in the future. From what I can see, she has a good hand for baking.

Elizabeth will return to work after her sabbatical. She wants to continue to have home-cooked meals, so she trying pressure cooker recipes.
I must congratulate Elizabeth on her success at cooking and baking. May others be inspired by her efforts to bring joy to the table.
