Healthier muffin options
I attended a muffin-baking class recently given by Soo Mui, a food and nutrition teacher, who said that there isn’t such a thing as a healthy cake, but there are healthier options of cakes with healthier ingredients. Her muffin recipe had been vetted by a dietitian. The muffins had oil and milk instead of butter, and they tasted just as good. The ingredients included atta flour, which is used to make chapati. The muffins were simple to make and didn’t need many utensils. Her tip was to mix the ingredients with a fork, but not to over mix, which would make the muffins tough and chewy.

Occasional Small Sweet Treats
It’s good to be health conscious. I am learning a lot from my online nutrition and health course, though trying to understand all the chemistry involved is proving to be a challenge. Once in a while, a sweet treat is good.

Chefs with a heart
I read an article yesterday about some chefs who used to work in hotels who are now working in hospitals. It’s a challenge for them to cook for patients who lack appetite, but need nutrition. I was impressed when I read that in a hospital an initiative was taken to replace vegetables with a high-calorie dessert to help patients who were struggling to eat because they found the food too bland. The high-calorie dessert mentioned was bubur pulut hitam, a tasty glutinous rice dessert. I was even more impressed by these chefs who now see their role in helping the sick. Their efforts to make the food look appetising go a long way.
The magic of a tea party
A few weeks ago, Elena made fancy open sandwiches, carrot cake with cream cheese, scones and chocolate cupcakes for a tea party. It didn’t take her long to prepare. Everything appeared magically and her guests were delighted by the homemade treats. (see featured image)
Breakfast treats
Feisan’s open sandwich breakfast was colourful and healthy, which is what I discovered are distinctive of her homemade breakfasts. You will always find fresh fruit and vegetables in them.

Tara’s yoghurt blueberry cake was perfect for breakfast. It wasn’t too sweet and it was quite light.

Ferninda’s banana pancakes were made with the help of her toddler, who broke the eggs and mixed the ingredients. She wrote: “It’s baby proof. Zero sugar!” She was looking for recipes for breakfast for her boys to take to school. I suggested French toast.
